About Lobo Butcher Shop

“My goal for the business is to serve my customers and community with the best meats and best experience as possible.”

Born and raised on California’s Central Coast, Ernesto Valle opened Lobo Butcher Shop in Guadalupe.  He brings over a decade of experience both learning from master butchers from as far back as the 1960’s through today’s modern techniques .

After years of working both with, and for others, Ernesto decided to open up his own old-school butcher shop in early 2022.  He found Guadalupe to be the perfect place to lay down some roots for the butcher shop.  From these new roots, Ernesto has grown Lobo to be a regular part of the community, working with residents, businesses, and non-profit organizations alike.  Being a part of the community and supporting local youth is a big deal to Ernesto and you can often find Lobo  Butcher Shop catering at many of the local sports events, fundraising for the youth programs – including the Champion Guadalupe Youth Football Bulldogs Program and the Central Coast Sports Arena’s Rage Youth Hockey Program.
